On February 26 – March 3, 2023. PhD student at the Doctoral School of the University of Life Sciences in Lublin, MSc. Robert Waraczewski participated in the international training “3D Food Printing” as part of the series of study meetings “Food Quality in Digital Age” financed by the Visegrad Grant (Visegrad Fund). The place of the first training was the Mendel University in Brno in the Czech Republic at the Faculty of Food Technology.

During the training, the doctoral student became acquainted with the modern technique of food production – 3D printing with chocolate, marzipan and various gels. This technique works finds a use in the preparation of products with a strictly defined composition, as well as with an interesting texture and a high focus on the appearance of confectionery decoration details.

What is more, the trip made it possible to get acquainted with one of the partner universities, use specialized laboratories equipped with, among others, equipment for the production of cold cuts, sausages, pâtés, fish products, brewery and baking. The PhD student also had the opportunity to exchange experiences, knowledge and ideas with other training participants from Hungary, Slovakia and Serbia, making the meeting a great opportunity to practice English.

During the trip, we managed to find a moment to explore the city, which is famous for its many monuments and attractions, including Spilberk Castle, St. Peter and Paul, the Church of St. James or the Tugendhat villa, entered on the UNSECO World Heritage List. Courtesy of Prof. Sonia Hermanova, a doctoral student had a chance to see the gardens of the Faculty of Horticulture, try the wines and cider produced there, and experience traditional Czech cuisine.

The training ended with a certificate confirming expertise in the 3D food printing technique, as well as a lot of pleasant memories and, due to the short stay, a slight craving, prompting to visit the Czech university again.
