From June 19th to August 22nd, 2023, a doctoral student at the University of Life Sciences in Lublin, MSc Eng. Anna Krajewska, completed a research internship at the University of Natural Resources and Life Sciences in Vienna (BOKU) under the supervision of Prof. Regine Schönlechner.
During her visit, the doctoral student focused on conducting research related to the issues of alternative grains in the context of gluten-free food production. The research internship provided a unique opportunity to become familiar with the work of the Food Technology Institute and to establish closer contact with its staff and other doctoral students.
The visit to Vienna enabled doctoral student to establish valuable professional and personal contacts and initiate scientific cooperation. Joining the research team specializing in the physicochemical properties of sprouted oats and sorghum was a key element of her work. During the internship, she conducted research on the content of alpha-amylase, free amino acids, soluble sugars, fiber, protein, polyphenolic compounds, and antioxidant activity in sprouted and non-sprouted seeds. Additionally, the doctoral student engaged in assisting students with their master’s theses, which allowed her to develop her teaching skills.
Beyond the scientific aspects, this internship also provided an opportunity to explore the extraordinary cultural and architectural attractions of Vienna. The doctoral student visited many significant places such as Schönbrunn Palace, the Belvedere, St. Stephen’s Cathedral, the Albertina, and the Museum of Art History, enriching her experience with the beauty and history of the city.
