In the period from November 21, 2022 to December 20, 2022, a doctoral student of the Doctoral School of UP in Lublin, Adam Grdeń, MSc, completed a foreign internship at Mendel University in Brno, Czech Republic, at the Faculty of Food Technology. The doctoral student’s scientific supervisor was Prof. Soňa Hermanová, PhD.

During the internship, the doctoral student prepared high-protein fermented beverages based on oat beverage with the addition of unconventional proteins, such as insect protein, potato protein, algae protein, microbial protein, and then analyzed their antioxidant potential and total polyphenol content by spectrophotometric methods.

During the internship, in addition to performing the planned research, the doctoral student had the opportunity to get acquainted with the staff and doctoral students of the Department of Food Technology at Mendel University in Brno, as well as with the equipment and research capabilities of this institution. The doctoral student received a presentation and short training on 3D food printing and NIR spectrometry, and had the opportunity to exchange experiences on the food analysis methods used.

The internship was also an excellent opportunity to exchange experiences and look for a field for future cooperation. Extremely interesting discussions on food and human nutrition were undertaken, from which interesting cooperation between universities can be born. The Mendel University staff has a wealth of experience and research capabilities, so the doctoral student was able to benefit from their knowledge and expand his range of analytical skills. By the way, the internship was an excellent opportunity to improve the English language.

The date of the internship fell during the pre-Christmas period, so it was possible to see Brno in an unusually beautiful Christmas scenery. Czechs celebrate this period quite intensively, among other things, meeting in the center among many market stalls with local food and handicrafts. There are also various concerts, performances and caroling together every day. It is a magical experience, quite different from that of the summer season.
