Pomace is a rich source of bioactive compounds with antioxidant, anti-inflammatory and anticancer properties. The use of fruit pomace in the production of candies will be an example of the use of fruit processing by-products and an economic factor reducing production costs. Candies with fillings based on natural products are in line with the latest trends in food production. The aim of the work is to determine the optimal filling recipe based on selected fruit pomace for hard candies and to create the candies with reduced sugar content. Moreover, the project tries to estabish the impact of the pomace on the physicochemical properties, sensory evaluation of the filling and the candies, and the content of selected bioactive compounds.
